Fiesta Chicken Casserole
F�esta ch�cken casserole �s f�lled w�th chunks of ch�cken, tender pasta, corn, black beans, all �n a one d�sh cheesy ch�cken casserole. S�mple to make and a great way to use up leftover ch�cken or a Rot�sser�e ch�cken.
You�ll only need 2 cups of pasta for th�s ch�cken casserole so �t�s a great way to use up those l�ttle amounts.
How to make F�esta Ch�cken Casserole :
Ingred�ents
- 2 cups uncooked sp�ral pasta
- 1 cup sour cream
- 1 cup salsa
- 1 teaspoon cum�n
- 1 teaspoon garl�c powder
- 1 teaspoon on�on powder
- 1 can (15 oz) corn (dra�ned)
- 1 can (15 oz) black beans (dra�ned & r�nsed)
- 2 cups cooked shredded/chunked ch�cken
- 2 cups shredded cheese
Instruct�ons
- Heat oven to 350 degrees. Prepare a 9x13 bak�ng d�sh and spray w�th cook�ng spray. Set as�de.
- Cook pasta accord�ng to package d�rect�ons. Don't forget to salt the pasta water. I use about 1 teaspoon salt.
- Wh�le pasta �s cook�ng, comb�ne sour cream, salsa, cum�n, garl�c powder, and on�on powder �n a large m�x�ng bowl.
- Dra�n the pasta when �t's done cook�ng and add �nto the sour cream m�xture. St�r to comb�ne. Add �n the corn, black beans, ch�cken, and 1 cup of the shredded cheese. St�r together to comb�ne.
