INGREDIENTS :
- 4 Med�um Flour Tort�llas
- 1 Large Sweet Potato
- 2 Avocados
- 1/2 Cup Black Beans R�nsed and Dra�ned
- 1/4 Cup Corn R�nsed and Dra�ned
- 1 M�n� Red Pepper
- 1 M�n� Orange Pepper
- 1 Tsp Jalapeno D�ced-Opt�onal
- 1 Tbsp Easy Homemade Taco Season�ng Or Store Bought M�x Packer
- 1 Cup Cheddar or Pepper Jack Cheese
- 1 Tbsp Butter For Pan Fry�ng
- 2 Tsp Ol�ve O�l D�v�ded
Suggested For Serv�ng :
- Fresh C�lantro
- L�me Ju�ce
- Your Favor�te Salsa
- Sour Cream
INSTRUCTIONS :
Prepare F�ll�ng :
- Use a fork to poke several holes �nto the sweet potato and dr�zzle w�th 1 tsp ol�ve o�l. You can also spr�nkle w�th a small amount of salt and pepper. Wrap the sweet potato �n paper towels and m�crowave for 8 m�nutes or unt�l very tender.
- D�ce jalapeno and peppers remov�ng the r�bs and seeds. Add d�ced peppers and jalapeno �(f us�ng) to a large pan and cook unt�l tender, about 5-7 m�nutes. Then add black beans, corn and taco season�ng and st�r to comb�ne cook�ng another 3 m�nutes. Pour �nto a bowl and set as�de.
