INGREDIENTS

Pineapple Teriyaki Glaze:
  • ? cup Kikkoman� Less Sodium Teriyaki Marinade & Sauce
  • � cup pineapple juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon brown sugar
  • Stuffed Chicken:
  • 4 boneless skinless chicken breasts (the plumper the better!)
  • � teaspoon salt
  • � teaspoon pepper
  • 4 slices of deli ham
  • 2 pineapple rings, sliced in half to create half moon shapes
  • 4 slices provolone cheese, sliced in half

INGREDIENTS
  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 medium bananas mashed - about 1 cup
  • 1/4 cup sour cream
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk chocolate chips
INSTRUCTIONS
  1. Preheat oven to 350 degrees. Spray a 9x5x3 loaf pan with non-stick spray.
  2. Add the butter and sugars to a mixing bowl and mix until well combined.
  3. Beat in the egg, vanilla, banana, and sour cream.
  4. Stir in the flour, cocoa powder, baking soda, and salt.
  5. Pour mixture into prepared loaf pan.
  6. Sprinkle the top with chocolate chips and gently press them into the batter.
  7. Bake for 70 minutes or until a tester comes out clean. If you under bake this, the center will sink upon cooling.
  8. Let bread cool completely before cutting and serving.
  • PLEASE NOTE: I baked this bread in a ceramic loaf pan. If you're using a glass or metal pan, your baking times may vary. Keep an eye on the bread and check with a tester before removing from the oven.

Instant Pot Sourdough Bread

This crusty and delicious Instant Pot Sourdough Bread is made with yogurt and is ready in less than 6 hours from start to finish. Ideal by itself or for sandwiches as well

Ingredients

  • 3 cups Bread Flour
  • 1 1/2 teaspoons Salt
  • 3/4 teaspoons Instant Yeast
  • 1 1/2 cups Unflavored Greek Yogurt more may be needed

Instructions

  1. In a bowl, mix the flour, salt, and yeast
  2. Add the yogurt and mix by hand until a dough is formed. If the mixture is too dry add 1 or 2 tablespoons more of the yogurt 
  3. Form a ball. Line the Instant Pot with parchment paper and place the dough ball inside. Cover with the lid on and press the Yogurt button.
  4. Let the dough proof inside the IP until the timer displays 4 hours
  5. Remove the dough from the IP and lay on a floured surface. Knead and shape into a ball. Cover with a tea towel or set on a floured proofer basket and cover.

Easy Cheesy Garlic Breadsticks 

Ingredients

  • 1 tube of refrigerated pizza crust
  • 1 Tablespoon butter, melted
  • 1 clove garlic, crushed
  • � cup grated mozzarella cheese (feel free to add more!)
  • 1 Tablespoon Parmesan cheese
  • 1 teaspoon dried oregano leaves (optional)

Instructions

  1. Preheat the oven to 425F.
  2. Roll out the pizza crust onto a parchment lined baking sheet.
  3. Mix together the melted butter and crushed garlic, then brush it evenly over the entire pizza crust.
  4. Sprinkle the mozzarella and Parmesan cheeses evenly onto the pizza crust. Then sprinkle the dried oregano evenly on top.
  5. Before you bake, cut the cheese covered pizza crust into 16 equal rectangles using a pizza slicer or large knife.

Ingredients

  • 2 cups sugar
  • 1 cup brown sugar
  • 2 cups butter-flavored Crisco
  • 4 eggs
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 2 tsp. soda
  • 5 cups flour
  • 2-3 cups semi-sweet chocolate chips

Instructions

  1. Cream together the sugars and Crisco with an electric mixer.
  2. Add the eggs and vanilla and mix.
  3. Add the salt, baking soda and flour and continue to mix until well combined.
  4. Fold in the chocolate chips.
  5. Use a cookie scoop to scoop cookies onto an ungreased cookie sheet; place the cookies about 2" apart.

Easy Low Carb Broccoli Cheddar Instant pot soup

Ingredients

  • 1 Broccoli medium-large head (cut into florets) or 4 cups
  • 1 medium carrot, matchstick cut. Or shredded carrots will do just fine (no more than � cup, see recipe notes below)

INGREDIENTS

  • 1 stick margarine
  • 1 cup water
  • 1 cup flour
  • 4 eggs
  • 1 box instant vanilla or white chocolate pudding (large box)
  • 3 cups milk
  • 8 oz cream cheese softened
  • 8 oz whipped cream
  • chocolate syrup


INSTRUCTIONS

  1. Boil together the margarine and water.
  2. Add flour and mix well. Cool slightly and stir in eggs, ONE AT A TIME. Mix well and spread into a greased 9x13 pan.
  3. Bake at 400 for 30 minutes. Cool completely. NOTE: Crust will spread up onto the sides (this is suppose to happen). ????
  4. In a large bowl, mix pudding, milk and cream cheese. Beat until lumps disappear. Pour into cream puff crust.
  5. Spread whipped cream on top of pudding and refrigerate for at least one hour before serving. Drizzle with chocolate syrup when serving.

Ingredients:
  • 8 flanken-style beef short ribs, cut 1 inch thick (5 pounds)
  • Salt and freshly ground pepper
  • 1/2 tablespoon each of chopped parsley, oregano and rosemary
  • 1 tablespoon vegetable oil
  • 1/2 pound sliced bacon, chopped
  • 1 large onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery rib, finely chopped
  • 1 1/2 cups Syrah or other dry red wine
  • 1 cup beef broth
Directions:
  1. Preheat the oven to 325�. Season the ribs with salt and pepper and sprinkle with the herbs.
  2. In a large skillet, heat the vegetable oil. Add the bacon and cook over moderate heat until crisp, about 6 minutes. Using a slotted spoon, transfer the bacon to a medium nonreactive roasting pan. Working in two batches, add the ribs to the skillet and cook over moderately high heat, turning a few times, until richly browned, about 6 minutes per batch. Transfer the ribs to the roasting pan.
  3. Add the onion, carrot and celery to the skillet and cook over moderately high heat, stirring occasionally, until lightly browned, about 5 minutes. Add the wine and beef broth and boil, scraping up the browned bits from the bottom of the skillet. Pour the liquid and vegetables over the ribs. Cover and braise in the oven for about 4 hours, turning the ribs once, until the meat is very tender.
  4. Transfer the ribs to a deep platter. Strain the braising liquid into a medium saucepan. Skim off the fat and boil the sauce over high heat until reduced to 2 cups, about 3 minutes. Season with salt and pepper, pour the sauce over the ribs and serve.

INGREDIENTS
  • 1 pound lean ground beef
  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
For the gravy:
  • 1 large vidalia onion diced
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon butter
  • kosher salt and pepper to taste
  • Chopped fresh parsley or chives
INSTRUCTIONS
  1. In a large bowl, use your hands to blend together the beef, bread crumbs, tomato paste, worcestershire sauce, ground mustard, onion powder, pepper and salt until well combined. Divide the beef mixture into four equal size portions and form into patties about 1/2 inch thick.
  2. Heat 1 teaspoon olive oil over medium heat in a large cast iron or heavy bottomed skillet. Add the patties to the pan and cook until browned, approximately 2-3 minutes. Turn the patties over and cook for 3-4 minutes longer or until browned. Transfer to a platter and keep warm.
  3. Pour off the fat in the pan and return to the heat. Add the onions to the pan and cook until translucent. Add the mushrooms and cook until softened. Stir in the thyme, garlic powder and flour. Cook for 1 minute. Slowly add the beef stock scraping the bottom of the pan to loosen the brown bits. Stir in the worcestershire sauce and bring the mixture to a boil. When the gravy begins to thicken, turn the heat down and stir in the butter. Season with salt and pepper to taste.
  4. Return the beef patties to the pan and cook for 5-7 minutes or until they are no longer pink in the middle.
  5. Sprinkle with parsley or chives, if desired. Serve immediately

Creamy Cheesy Chicken Spaghetti

Ingredients

  • 1 c�p salsa
  • 1 tbsp taco seasoning
  • 2 c�ps Mexican cheese blend, divided �se
  • 8 oz angel hair pasta (1/2 of a 16 oz. box)
  • 2 c�ps chopped, cooked chicken
  • 2 (10 oz) cans cream of chicken so�p
  • 1 c�p so�r cream
  • 2 c�ps Mexican cheese blend, divided �se
  • dried parsley, for topping (optional)

Instructions

  1. Preheat oven to 350f degrees.
  2. Spray a 9x13 baking dish with nonstick cooking spray.
  3. Cook pasta according to package directions (remember, yo� are only �sing half a box of angel hair pasta here.)
  4. Once pasta is cooked, drain well.
  5. Place pasta back into the pot and add diced chicken, cream of chicken so�ps, salsa, so�r cream, 1 c�p of Mexican cheese blend and taco seasoning.
  6. Stir well to combine (this will take a few min�tes.)
  7. Po�r combined mixt�re into yo�r prepared baking dish.
  8. Top with remaining cheese and a sprinkling of dried parsley.
  9. Cover with nonstick al�min�m foil.
  10. Cook in the oven for abo�t 25 min�tes (�ntil hot and b�bbly.)

My mom said amazing combination of flavors. She never would have thought to put those together!! We made this for our weekly Vegan meal with my mom to support her in her vegan journey! They were awesome! The sweet potato really stole the show but was not too sweet! Of course we used vegan cheese and butter but the taste of the veggies were to die for. This will definitely be a regular meal in our book!!!

Vegetarian Quesadillas





Vegetarian Quesadillas

Ingredients

  • 1 Mini Red Pepper
  • 2 Tsp Olive Oil Divided
  • 2 Avocados
  • 4 Medi�m Flo�r Tortillas
  • 1 Large Sweet Potato
  • 1/2 C�p Black Beans Rinsed and Drained
  • 1/4 C�p Corn Rinsed and Drained
  • 1 Mini Orange Pepper
  • 1 Tsp Jalapeno Diced-Optional
  • 1 Tbsp Easy Homemade Taco Seasoning Or Store Bo�ght Mix Packer
  • 1 C�p Cheddar or Pepper Jack Cheese
  • 1 Tbsp B�tter For Pan Frying

Suggested For Serving

  • Fresh Cilantro
  • Lime J�ice
  • Yo�r Favorite Salsa
  • So�r Cream

Instructions

Prepare Filling
  1. Use a fork to poke several holes into the sweet potato and drizzle with 1 tsp olive oil. Yo� can also sprinkle with a small amo�nt of salt and pepper. Wrap the sweet potato in paper towels and microwave for 8 min�tes or �ntil very tender.
  2. Dice jalapeno and peppers removing the ribs and seeds. Add diced peppers and jalapeno i(f �sing) to a large pan and cook �ntil tender, abo�t 5-7 min�tes. Then add black beans, corn and taco seasoning and stir to combine cooking another 3 min�tes. Po�r into a bowl and set aside.
Assemble the Quesadilla
  1. Lightly spread b�tter over one side of the tortilla. On the other side spread abo�t 3 tbsp of sweet potato over the tortilla. Next mash half of an avocado over the sweet potato. Add abo�t 1/4 c�p of the veggie/bean filling over the top of the avocado. Finally sprinkle a genero�s amo�nt of cheese over top.
  2. Place the b�tter side of the tortilla down on the warm pan and cook over medi�m heat �ntil tortilla is browned and cheese is melted. Caref�lly fold tortilla in half on to itself �sing the spat�la. Repeat �ntil all tortillas are filled and cooked. Slice and serve warm with s�ggested toppings and enjoy!

Ingredients
Chicken:
  • 4 large chicken breasts
  • 2 sleeves Ritz crackers
  • 1/4 t salt
  • 1/8 t pepper
  • 1/2 C milk
  • 3 C cheddar cheese, grated
  • 1 t dried parsley
Sauce:
  • 1   10 ounce can cream of chicken soup
  • 2 T sour cream
  • 2 T butter
Instructions

1. Cut each chicken breast into 3 large chunks.
2. In a small food processor grind up the ritz crackers.
3. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the 1/4 t salt and 1/8 t pepper into the cracker crumbs and stir the mixture around to combine.
4. Dip each piece of chicken into the milk then the cheese. Press the cheese into the chicken with your fingers. Some of it will fall off when you add it to the cracker crumbs, don't worry about it. Press the cheesy chicken into the cracker crumbs and press it in. By the time you are coating the last piece of chicken, the dish you are using for the crumbs will be full of cheese. Don't let it get you down. Once the cheese melts in the oven it will adhere nicely to the crumbs and the crackers.
5. Spray a 9x13 pan with cooking spray and lay the chicken inside the pan.
6. Sprinkle the dried parsley over the chicken.
7. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy.
8. Into a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

Black and White Cake

Black and White Cake is an all time kid favorite among our family and friends. A easy one-bowl chocolate cake covered in plenty of fluffy marshmallow frosting is sure to please kids of all ages. 

Ingredients

For the chocolate cake
  •     2 cups sugar
  •     2 cups all purpose flour
  •     3/4 cup cocoa
  •     2 tsp . baking powder
  •     1 tsp baking soda
  •     1/2 tsp salt
  •     2 eggs
  •     1 cup soured milk
  •     1 cup brewed black coffee, (or prepare a single cup of instant coffee)
  •     1/2 cup vegetable oil
  •     1 tsp vanilla extract
For the marshmallow frosting
  •     4 egg whites
  •     � tsp cream of tarter
  •     2 tsp vanilla extract
  •     1 1/4 cups sugar
  •     � cup corn syrup
  •     1/4 cup water

Candied Roasted Sweet Potatoes

Altered from the late Mrs. Connie Parker�s recipe. She shared her version with me many years ago after years of bringing it to church potlucks. I roast my sweet potatoes instead of boiling them and melt the butter instead of dotting with cold butter.

Ingredients

  •     5 or 6 small sweet potatoes
  •     1 1/2 cups granulated sugar
  •     1/2 cup light corn syrup
  •     1/2 cup salted butter melted
  •     2 cups mini marshmallows optional
